A proper truffle is a creamy ganache center coated with a thin but strong shell of tempered chocolate, left plain or covered in nuts, sugar or some internal flavor identifier. Kim will explain how chocolate is tempered, demonstrate the variety of ways to coat chilled piped ganache (don't be afraid - Kim will guide you!) Then for the balance of the first night, a variety of ganache centers will be made: raspberry, mint chocolate, and passionfruit are a few of the centers we will create. Then the second night we'll mold, chill and coat the centers. Be prepared to take at least 5 pounds of hand crafted truffles home for future parties or gift giving. These truffles will hold through the holidays if kept properly stored. Please wear clothes you don't mind getting chocolate on! Bring to class: apron, dish towel and a number of containers.
