One quick evening to learn and prepare 5 different tasty, giftable treats to take home and give for the holidays. Advice on storing will be discussed and recipes will be simpler than you might expect!  Coffee Toffee Chocolate Brittle, Buttery Cashew Brittle and Chocolate Kumquat & Cherry Bark are a few recipes we will prepare.  Bring to class:  apron, dish towel, chopping knife, and take home container.

Chef Pascal is also a butcher by trade. By combining butchering and cooking, Chef Pascal has the best of both worlds. Knowing where the meat comes from on the animal allows him to choose the best cooking technique. We will be cooking Duck a l`Orange, Tournedos of Filet Mignon Bordelaise, Rack of Lamb, and Pork Chops.  Chef will demonstrate how to cook every recipe perfectly so you can wow your friends and family. Bring to class: apron, dishtowel, paring and chef knife, nonstick pan and take home container.

Fish is one of Chef Pascal's favorite dishes to make and he has an endless repertoire of recipes to share with you.  Not only is fish healthy and delicious, it's also quick and easy to prepare.  Come learn a variety of cooking methods and address one of the most common problems of working with fish--overcooking.  Also learn how to recognize fresh fish and the do's and don'ts when buying and selecting fish.  To ensure the class offers the freshest ingredients Chef's fish selection is done just prior to each class, therefore recipes will vary depending on availability.  Bring to class: apron, dishtowel, paring and chef knife, nonstick pan and take home container.
